Ingredients

  • 6 cup water
  • 2 cup penne pasta
  • ½ tsp salt
  • 1 cup cold water, to rinse
  • 3 tsp oil
  • 2 clove garlic, finely chopped
  • ½ onion, finely chopped
  • ½ carrot, finely chopped
  • 2 tbsp sweet corn
  • ¼ capsicum, finely chopped
  • ½ tsp pepper, crushed
  • 1 tsp mixed herbs
  • ½ tsp chilli flakes
  • ½ tsp salt
  • ¼ cup mayonnaise, eggless

Instructions

Boil water with salt in a large vessel, then add penne pasta. Cook for about 10 minutes or as per package instructions until al dente.

Drain the cooked pasta and rinse with cold water to stop the cooking process.

In a large pan, heat oil and sauté chopped garlic until fragrant.

Add onions and cook until slightly shrunken.

Stir in carrot, sweet corn, and capsicum and stir fry for 2 minutes, keeping vegetables slightly crisp.

Mix in crushed pepper, mixed herbs, chilli flakes, and salt. Add about ½ cup reserved pasta water.

Turn heat to low and add eggless mayonnaise, stirring to create a creamy sauce. Do not allow the mixture to boil.

Add the boiled pasta, combining until the sauce evenly coats the pasta.
