Dinner Rolls with Mashed Vegetables Dip (Mumbai Street Style Pav Bhaji)

Pav Bhaji is the most popular Indian Street Food where Pav or Dinner Rolls are served with hot Bhaji or spicy Mashed Vegetables, topped with a dollop of butter that melts all over… yummm!! Pav bhaji is loved by all not only for its lip-smacking taste but also for its simplicity i.e. regularly available, easily sourced ingredients. You can add any vegetables of your choice to the bhaji like carrots, green peas, green beans etc. (This is where you get creative 😉 ). But the 3 must-have veggies that form the base of this recipe are potatoes, cauliflower and green bell peppers. (Can’t do without ’em! 🙂 ). Pav Bhaji is typically served for lunch or dinner but can also be enjoyed as a snack!

Dinner Rolls with Mashed Vegetables Dip (Mumbai Street Style Pav Bhaji)

Ingredients

  • For the Bhaji
  • 1. 1 tbsp Butter
  • 2. 1 medium Red Onion, finely chopped
  • 3. 2 medium Tomatoes, finely chopped
  • 4. 1 tsp Cumin Seeds
  • 5. 1 Green Bell Pepper, chopped
  • 6. 2 ½ cups Cauliflower, chopped
  • 7. 2 large Potatoes, boiled, peeled and mashed
  • 8. ½ cup Green Peas
  • 9. ½ cup Green Beans, chopped
  • 10. ½ cup Carrots, chopped
  • 11. ½ tsp Turmeric Powder
  • 12. 1 tbsp Pav Bhaji masala
  • 13. 1 tsp Red Chili Powder
  • 14. 1 sprig Cilantro, finely chopped
  • 15. Water as required
  • 16. Salt to taste
  • For Serving Pav / Dinner Rolls
  • 1. 2 tsp Butter
  • 2. 8 Pav / Dinner Rolls, slit across
  • 3. ½ Red Onion, finely chopped
  • 4. 1 medium Lemon, wedged

Instructions

In a large pan heat butter and add cumin seeds and let them sizzle. Add onions and saute till lightly browned.

Saute tomatoes till they turn soft and mushy. Add turmeric and red chili powders as well. Add just 2 tsp of Pav Bhaji Masala to start with. Let the spices roast and mix in well.

Next, add green bell peppers and saute for a minute. Then add the cauliflower, green peas, green beans and carrots and saute. Add salt and water as required and let it cover and cook well.

Using a masher, mash the veggies really well. Stir in the mashed potatoes and the remaining pav bhaji masala. Add more butter here as well if you prefer. Mix well, cover and let it come to a boil. Also adjust water as needed.

Add finely chopped cilantro and your Bhaji (Mashed Vegetables Dip) is ready!

For Serving Pav / Dinner Rolls

Melt butter in a pan on medium heat and sprinkle some pav bhaji masala on it. First toast the inner side of the slit pav and then flip and toast the outer sides as well, allowing the butter to coat all over and the pav to turn crisp and brown.

Serve the toasted pav with the bhaji, garnished with a dollop of butter, a few chopped onions, cilantro and a wedge of lemon on the side!

Notes

Tips
1) If you can't find Pav / Eggless Dinner Rolls, use regular burger buns instead.
2) Avoid cooking the potatoes with other veggies. Adding the mashed potatoes towards the end reduces the cooking time very much!
3) A generous squeeze of lemon juice on the bhaji is a must before serving!
4) Don’t forget the chopped onions and cilantro while serving pav bhaji. Adds to the taste and gives the perfect street food experience!
5) Make use of lots of butter.
