Vegan Nacho Cheese Sauce

- 1. 2 cups Cashew Nuts (pre-soaked about 2 hrs)
- 2. 2 tbsp Lemon Juice
- 3. 2 cups Cashew Milk
- 4. 1/4 cup Nutritional Yeast
- 5. 1/2 tsp Smoked Paprika
- 6. 2 tsp Jalapeno, diced
- 7. 1 tsp Onion Powder
- 8. 1 tsp Garlic Powder
- 9. 1/2 tsp Turmeric Powder
- 10. Water as required
- 11. Salt to taste
Instructions
To a blender, add the soaked cashew nuts, lemon juice, cashew milk, nutritional yeast, smoked paprika, jalapeno, onion, garlic and turmeric powders and blend to a smooth sauce.
Transfer the cheese sauce to a saucepan over medium heat. Add water as required to adjust to your preferred consistency. Whisk constantly until it begins to thicken and bubble. Then transfer to a serving bowl.

Notes
Tips:
1) Add water a little at a time while adjusting the consistency as you may risk the sauce becoming too thin.
