Chipotle Cilantro Lime Rice

- 1. 1 1/2 cup Long Grain Rice or Basmati Rice
- 2. 3 cups Water
- 3. 1 tsp oil
- 4. 1 Bay leaf (small) (Secret Ingredient)
- 5. 1/4 cup Cilantro Leaves, finely chopped
- 6. Lime Juice β to taste
- 7. Salt to taste
Instructions
Soak 1 1/2 cups of rice in 3 cups of water for 20 minutes.
Cook the soaked rice with 1/2 tsp oil and bay leaf.
Add salt, chopped cilantro leaves and lime juice and mix well.
Enjoy the Cilantro Lime Rice, Chipotle Style! π
Notes
1. Addition of oil keeps the grains separate and avoids it getting mushy. 2. Keep it aside 10 minutes before serving to let the flavors blend in.
