Vegetable Lo Mein

- For Lo Mein:
- 1. 250 gms Lo Mein Noodles
- 2. 1 cup julienned Carrot
- 3. 100 gms sliced Red Bell Peppers
- 4. 100 gms sliced Shiitake Mushrooms
- 5. 1/2 small Cabbage, chopped
- 6. 100 gms Edamame
- 7. 100 gms Snow Peas
- 8. 100 gms Broccoli
- 9. 100 gms Water Chestnuts
- 10. 100 gms Asparagus Spears
- 11. 2 tbsp Olive oil or vegetable oil
- 12. 1 tsp Garlic Paste
- 13. Sesame Seeds, for garnishing
- 14. Fresh chopped Onion Greens, for garnishing
- 15. Salt to taste
- 16. Black Pepper to taste
- For the Sauce:
- 1. 1/4 cup soy sauce
- 2. 1 tbsp hoisin sauce
- 3. 1/2 tbsp sesame oil
- 4. 1/4 cup hot water
Instructions
Bring water to boil in a medium pan, adding salt and noodles and cook until al dente. Drain the noodles and toss with olive oil or vegetable oil to prevent sticking.
In a mixing bowl, add all the sauce ingredients. Mix well and keep aside.
In a wok over medium-high heat, add 2 tbsp olive/ vegetable oil. Once hot, add garlic paste and mushrooms and saute for 2 mins. Then add salt, black pepper and rest of the vegetables and cook for another 4 mins.
Now, add the sauce and noodles and cook for another 2 mins until vegetables and noodles are nicely coated and the flavors blend.
Finally garnish with chopped onion greens and sesame seeds and serve hot.
Notes
1. Add more soy sauce in case the noodles or vegetables look dry.
