Bread Bajji (Crunchy Bread Fritters or Bread Pakoda) is an extremely popular evening snack in all parts of India. It is very simple, quick to prepare and tastes so well that it is absolutely loved by all alike! It is made using chickpea flour (or besan) and bread as the major ingredients, providing a good balance of proteins and carbs in a single snack. Some people sandwich the bread pieces with a potato filling. But I like to keep it simple yet yum! Pair this delectable snack with some ketchup or mint chutney and hot masala chai (spiced tea) for a complete tea-time indulgence! π

- 1. 4 Slices Bread, each cut into 4 equal parts
- 2. 1 cup Chickpea Flour (Besan)
- 3. 1 tbsp Rice Flour (optional, for added crunch)
- 4. 1/4 tsp Turmeric Powder
- 5. 1 tsp Red Chili Powder
- 6. 1 pinch Asafoetida
- 7. 1/2 tsp Ajwain (Carom Seeds)
- 8. 1 tsp Ginger, finely chopped
- 9. 2 tbsp Cilantro, finely chopped
- 10. Water as required
- 11. Salt to taste
- 12. Oil for deep frying
Instructions
In a mixing bowl, whisk all the ingredients together along with water, except bread, into a smooth, semi-thick batter.
Bring the oil for frying to medium-high heat. Dip each piece of bread in the batter and fry them till golden-brown on both sides.

Notes
Make sure that the prepared batter has no lumps, is not too runny nor too thick. It must be semi-thick and yielding in consistency (like pancake or dosa batter).
Ajwain (carom seeds) and ginger not only enhance the taste and flavor, but help in digestion as well!
