Chipotle Cilantro Lime Rice

Anyone who has tried Chipotle’s burritos would have wondered at least once how they concoct their mild yet flavorful rice to perfection. Here is the copycat recipe of Chipotle’s Cilantro Lime Rice for those who would like to bring a flavorful life to the regular rice!

Chipotle Cilantro Lime Rice

Ingredients

  • 1. 1 1/2 cup Long Grain Rice or Basmati Rice
  • 2. 3 cups Water
  • 3. 1 tsp oil
  • 4. 1 Bay leaf (small) (Secret Ingredient)
  • 5. 1/4 cup Cilantro Leaves, finely chopped
  • 6. Lime Juice – to taste
  • 7. Salt to taste

Instructions

Soak 1 1/2 cups of rice in 3 cups of water for 20 minutes.

Cook the soaked rice with 1/2 tsp oil and bay leaf.

Add salt, chopped cilantro leaves and lime juice and mix well.

Notes

1. Addition of oil keeps the grains separate and avoids it getting mushy.
2. Keep it aside 10 minutes before serving to let the flavors blend in.
