Chipotle Style Fajita Veggies

- 1. 200 gms Onions (roughly sliced)
- 2. 300 gms Bell Peppers any color (roughly sliced)
- 3. 1 tsp Oregano
- 4. Salt to taste
- 5. 2 tbsp Vegetable Oil/ Olive Oil
Instructions
To a pan over medium-high heat, add oil. Wait until oil is hot (nearly smoking).
Add sliced onion and stir fry till it is caramelized.
Add peppers, 1 tbsp oregano and salt and stir fry for 4-5 mins.
Remove from heat and enjoy the juicy, tender-crisp and brightly colored Chipotle Style Fajita Veggies.
Notes
You can also include other veggies like mushrooms, broccoli, zucchini and tomatoes for a richer mixture of vegetables!
