My personal favorite combination as a kid was to have Kerala Vegetable Stew poured over plain bread or dinner rolls! - 1. Onions (Sliced) - 1/4 cup
- 2. Minced Ginger - 2 tsp
- 3. Curry Leaves - 1 sprig
- 4. Green Beans (Chopped) - 1/4 cup
- 5. Carrots (Diced) - 1/4 cup
- 6. Green Peas - 1/4 cup
- 7. Potatoes (Diced) - 2 medium sized
- 8. Cauliflower Florets - about 8
- 9. Cut Green Chili - 1
- 10. Black Pepper Powder - 1/2 tsp
- 11. Thin Coconut Milk - 2 cups
- 12. Thick Coconut Milk - 1/2 cup
- 13. Coconut Oil - 1 tbsp
- 14. Salt to taste
Instructions
In a large pan, on medium heat, add coconut oil. Once the oil heats up, add the ginger, green chili and onions and saute.
Once the onions turn translucent, add the curry leaves and black pepper powder and give it a good stir.
Next add all the vegetables and salt and saute for a minute.
Now add 2 cups of thin coconut milk and let the vegetables cook covered until soft, stirring occasionally. Add more water to cook, if required.
Once it comes to a boil, reduce the heat and add in the thick coconut milk, stirring gently. Simmer for 2-5 minutes.
Your delicious Coconut Infused Vegetable Stew or Kerala Vegetable Stew is ready to serve hot!
Notes
Tips:
1) To make 2 cups thin coconut milk, you may combine 1/2 cup thick coconut milk with 1 and 1/2 cups of water.
