Ingredients

  • 2 cups whole wheat flour
  • 2/3 cup cocoa powder
  • 3 tablespoons flax seed meal
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups raw cane sugar
  • 1 cup vegan butter, softened
  • 1/2 cup cinnamon applesauce
  • 2 teaspoons vanilla extract
  • 1 cup chopped walnuts

Instructions

1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

2

In a large mixing bowl, whisk together the whole wheat flour, cocoa powder, flax seed meal, baking powder, baking soda, and salt until well combined.

3

In a separate bowl, cream together the raw cane sugar, softened vegan butter, and cinnamon applesauce until the mixture is smooth and fluffy. Stir in vanilla extract.

4

Gradually blend the wet ingredients into the dry mixture, mixing until a soft, cohesive dough forms. Gently fold in the chopped walnuts.

5

Scoop tablespoon-sized portions of dough and place them about an inch apart on the prepared baking sheet.

6

Bake for 15 to 20 minutes, or until the cookies are set and a toothpick inserted in the center comes out clean. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Tips:
Homemade applesauce gives you control over sweetness; adjust to taste., Use white whole wheat flour for a lighter texture, or substitute classic all-purpose if preferred., Chill the dough for 15 minutes before baking for thicker, chewier cookies., For a non-vegan version, you can substitute regular butter.
