It is all the more special as it has two different sources of healthy plant based proteins – from tofu and peanuts, leaving you feeling full and pleasantly satisfied. Easy Vegan Pad Thai - Authentic Thai Style

Ingredients

  • 1. 200 gm Rice Noodles
  • 2. 150 gm Fried Tofu, cubed
  • 3. 1/2 cup Red Onion, sliced
  • 4. 3-4 Green/ Spring Onions, chopped (bulbs and greens separated)
  • 5. Roasted Peanuts, roughly crushed, divided
  • 6. 1/2 tsp Red Chili Flakes, optional
  • 7. 1 tbsp Vegetable Oil
  • 8. Salt to taste
  • For the sauce:
  • 1. 1/2 tbsp Dark Soy Sauce
  • 2. 2 tbsp Light Soy Sauce
  • 3. 1/2 tbsp Vinegar
  • 4. 1/2 tbsp Tamarind Paste
  • 5. 1 tbsp Palm Sugar/ alternately Brown Sugar

Instructions

Bring a large pot of water to a near boil. Remove from heat and add in the noodles and about 1 tsp of oil. Let it soak for about 5 mins until al dente. Drain and rinse with cold water. Keep aside.

Next, prepare the sauce by mixing all the sauce ingredients together in a small bowl. Stir until well combined and cohesive. Set aside.

Heat oil in a wok or a large pan over medium heat. Add the sliced onions and green onion bulbs and stir-fry till translucent. Add in the red chili flakes, roasted peanuts and fried tofu cubes and stir-fry. Then pour the prepared sauce, mix well and let it cook covered for about a minute.

Add the rice noodles, a little at a time and mix well. Stir-fry and coat the noodles thoroughly in the sauces. If needed, sprinkle some water if the noodles are getting dry. Also adjust salt as needed.

Notes
