Homemade Vegan Burger

- 1. 1 tbsp Vegetable Oil
- 2. 1 Onion, finely chopped
- 3. 1/2 cup canned Black Beans, drained well
- 4. 1/2 cup canned Chickpeas, drained well
- 5. 1 cup fresh Mushrooms, finely chopped
- 6. 1 cup Mashed Potatoes (for binding)
- 7. 1 tsp Cumin Powder
- 8. 1 tsp Garlic Powder
- 9. 1 tsp Parsley
- 10. 1/2 cup gluten-free All Purpose Flour
- 11. Salt to taste
- 12. Black Pepper to taste
- 13. 2 tbsp Vegan Barbecue Sauce
- 14. Oil for pan frying
Instructions
To a pan over medium heat, add vegetable oil and saute the onions for a few minutes until soft. Add the cumin and garlic powders and finely chopped mushrooms and cook until the mushrooms are done and all the spices are absorbed well. Transfer to a bowl and set aside.
Add the black beans and chickpeas to a food processor and process until well mixed in. Transfer to the bowl with the onion mixture. Also add the parsley, salt & black pepper and mix well.
Add in the mashed potatoes and gluten-free all purpose flour and knead the mixture well. It should be firm but yielding, dry and non-sticky.
Divide into four equal parts and shape each part into a burger patty, about 3/4th inch thick and 4 inches in diameter. You can also use a round cutter to get the perfect round shape.
Heat oil in a frying pan over medium-high heat and add in the burgers. Once they begin to cook, brush vegan barbecue sauce onto the tops of the burgers. Fry for about 5 mins on one side and then flip them and brush the other side as well with the barbecue sauce.

Notes
Tips:
1) If you are using the grill, make sure that the grill is lightly greased with oil so the burger patties wont stick to it. Follow the same method to cook them, coating with vegan barbecue sauce.
2) If you find your patties are not firm enough or getting crumbly while shaping them, just add more mashed potatoes to hold them together.
3) If they are wet or sticky, add more all purpose flour. That should do the job for you! π
