Quesadillas are a go-to quick meal for many. But what about the Vegans? Of course, there’s Vegan Quesadillas! These Hummus Quesadillas are non-dairy, protein-rich and made using fresh veggies that make it a complete balanced meal. This recipe couldn’t get healthier if using homemade hummus. Use hummus or fresh guacamole as a side or dip with these delicious vegan quesadillas and enjoy! 🙂
Hummus Quesadillas

- 1. 4 Tortillas
- 2. 8 tbsp Hummus
- 3. 1 cup Spinach
- 4. 1 small Red Onion, finely chopped
- 5. 1 ripe Tomato, diced and seeded
- 6. 1/2 cup Olives, thinly sliced
- 7. Olive Oil for cooking
- 8. Salt to taste
Instructions
Heat olive oil in a pan over medium heat. Add the onions and saute till translucent. Add in the tomatoes, olives and spinach and saute till dry and fragrant (no water remains). Sprinkle with salt to taste. Let it cool and keep aside.
Give a generous coating of hummus over each tortilla. Add a filling of the prepared veggie mix on one half of the tortilla. Fold the other half over.
Warm a skillet over medium heat. Place 2 quesadillas side by side in the skillet (helps save time). Brush the tops with olive oil. When the bottom side turns golden-brown, carefully flip and cook the other side while brushing the tops once again with olive oil.
Transfer the quesadillas onto a serving plate, slice with a knife or pizza cutter and serve warm. Use more hummus or guacamole as a side/ dip for the quesadillas and enjoy...! 🙂
Notes
You may use any combination of veggies as a filling for the quesadillas!
