Potato and Tomato Soup (Thiksani Humman)

- 1. 2 Medium Potatoes, peeled and cubed
- 2. 2 Medium Tomatoes, cubed
- 3. 1 tsp Red Chili Powder
- 4. 1 tsp Mustard Seeds
- 5. 1 tsp Fenugreek Seeds
- 6. 1 tsp Urad Dal (Split Black Gram)
- 7. 1 pinch Asafoetida (Hing)
- 8. 1 tbsp Coconut Oil
- 9. Water for Cooking
- 10. Salt to taste
Instructions
In a large pan, heat the coconut oil over medium-high heat. Add mustard & fenugreek seeds and urad dal. Roast them till aromatic. Then add asafoetida (hing) and red chili powder.
Add in the cubed potatoes and tomatoes along with required amount of water to cook the vegetables. It should be of the consistency of a soup. Also add salt to taste. Cover and cook till done.
