Saag Paneer (Fresh Cheese in Curried Leafy Greens)

Who said leafy greens are boring? Certainly not! Trust me, they’re absolutely delicious. Any dish can be boring or great tasting… It’s all in the cooking! This mouthwatering Saag Paneer (Fresh Cheese in Curried Leafy Greens) is made using a combination of 4 different leafy greens (spinach, mustard greens, fenugreek leaves & cilantro) and paneer (Indian cottage cheese), then mixed with subtle spices that would simply leave you craving for more. With numerous health benefits from the different greens, combined with proteins from the cheese, this is a complete dish in itself. Pair it with Naan or any bread of your choice and indulge in this rich vegetarian goodness! 😇

Ingredients

  • 1. 1/2 bunch Mustard Greens, roughly chopped
  • 2. 1/2 bunch Spinach, roughly chopped
  • 3. 1/4 bunch Fenugreek Leaves, roughly chopped
  • 4. 1/4 bunch Cilantro, roughly chopped
  • 5. 200 gms Paneer, cubed
  • 6. 1 small Red Onion, pureed
  • 7. 1 medium tomato, pureed
  • 8. 1 tsp Ginger, grated
  • 9. 1 tsp Cumin Seeds
  • 10. 2 tsp Garam Masala Powder (or more to taste)
  • 11. 1 tsp Red Chili Powder
  • 12. Salt to taste
  • 13. Oil for cooking

Instructions

Bring a large pan of water to boil. Add all the chopped greens in together and cook till tender. Drain well and let it cool. Then puree the mixed greens in a blender or food processor and keep aside.

In a large pan, heat 1 tbsp of oil. Fry the cumin seeds and ginger till aromatic. Then add the pureed onions and fry till brown, stirring constantly. Next add the red chili & garam masala powders and mix well. Add in the pureed tomato now and let it blend with the spices. Roast till the oil separates.

Now add the pureed greens and mix well. Let it cook in the spices. Add water to adjust to your preferred consistency. Also add salt and some more garam masala (if required) per your taste.

Finally, add the cubed paneer in the gravy and bring to a boil.

Your super yummy Saag Paneer (Fresh Cheese in Curried Leafy Greens) is now ready to serve hot, paired with your favorite bread. Enjoy! 🙂

Notes

Ensure to wash and clean all the greens well. Also chop off the hard stems.
You may also add some fresh heavy whipping cream for added richness.
