Savory Rice And Lentil Breakfast Porridge (known as Ven Pongal / khara pongal) is a very easy and popular south Indian breakfast. It is highly nutritious and a well balanced meal due to the perfect blend of proteins, carbs and fats in it. There are different consistencies this porridge can be prepared in. Some like it thick and solid, others like it semi-thick and gooey and a few others prefer it somewhat thin and flowy but cohesive in consistency. This can be achieved by adjusting the water content (and proportionately the salt and pepper πŸ˜‰ ). However you prefer to have it, be sure to serve it hot with your favorite chutney or sambar!! πŸ˜€

Ingredients

  • 1. Raw Rice - 1 cup
  • 2. Split Skinned Moong Dal - 1 cup
  • 3. Salt to taste
  • For Seasoning:
  • 4. Cumin Seeds - 1 tsp
  • 5. Minced Ginger - 1 tbsp
  • 6. Asafoetida - 1 pinch
  • 7. Crushed Whole Black Pepper - 1 tbsp
  • 8. Desi Ghee / Clarified Butter - 5 tsp

Instructions

Dry roast the split moong dal in a pan till it lets out its aroma.

Add the rice and roasted moong dal together in a pressure cooker and add sufficient water to cook.

Once cooked, pour about 2 cups of water, add salt and mix well. Further, you may adjust the water now for your preferred consistency (thick / thin).

In a separate pan, on medium heat, add desi ghee / clarified butter. Once hot, add cumin seeds and crushed black peppers, minced ginger and asafoetida.

Toss the seasoning into the Pongal, mix well and simmer, adjusting the water if required.

Notes

Tips:
1) Along with the seasoning you can fry split cashews and golden raisins and add it to the recipe for an extra crunch and richness.
2) Some add curry leaves to the seasoning. It is optional and per your preference.
