- 1. Finely Chopped Carrots - 5
- 2. Finely Chopped Red Onion - 1/4 cup
- 3. Roughly Chopped Raw Peanuts - 1/4 cup
- 4. Salt to taste
- For the Seasoning:
- 1. Coconut Oil - 4 tsp
- 2. Mustard Seeds - 1 tsp
- 3. Cumin Seeds - 1 tsp
- 4. Finely Chopped Green Chili - 1
Instructions
Heat coconut oil in a pan and add all the seasoning ingredients to it and let it splutter.
Now add the finely chopped onions and salt and let it cook till translucent.
Add the chopped peanuts and let it cook for a minute.
Next add the finely chopped carrots and let it cook for 5-7 mins on medium heat with closed lid.
Your tasty and crunchy Stir-Fried Carrots with Peanuts is now ready to serve hot!

There is no need to add water as all the veggies have their own water content to cook in!
