Collard greens are a beautiful way of including leafy green vegetables in our diet for it’s numerous benefits. They are an excellent source of vitamin A, vitamin C and calcium, a rich source of vitamin K and a good source of Iron, vitamin B-6 and Magnesium. They also contain thiamin, niacin, pantothenic acid and choline – which is a whole pack of essential nutrients in one bunch of these lovely greens! (Isn’t this enough excuse to throw those artificial multi-vitamin supplements out?)
Well, there are a variety of ways these luscious collard greens can be included in our diet. But my favorite, easy-to-make and absolutely flavorful way of preparing these greens is by stir frying them with coconuts! These delicious Stir Fried Coconut – Collard Greens are Vegan, Vegetarian and so awesome that you’ll want to include it with your meals Every-Single-Day!! 😀
Stir Fried Coconut - Collard Greens

- 1. 1 Bunch Collard Greens, Finely Chopped
- 2. 1/2 cup Fresh Grated Coconut
- 3. 1 tsp Red Chili Powder
- 4. 1/2 tsp Turmeric Powder
- 5. 1/2 tsp Mustard Seeds
- 6. 1/2 tsp Cumin Seeds
- 7. 1 tbsp Coconut Oil
- 8. Salt to taste
Instructions
To a large pan over medium heat, add coconut oil. Once the oil heats up, add mustard & cumin seeds and let them splutter.
Add the finely chopped collard greens and stir well to coat it in the oil. Next, add the red chili & turmeric powders and salt. Cover and cook.
Once the leaves are half cooked, add the grated coconut. Again cover and cook till tender and done.
Your lip-smacking Stir Fried Coconut - Collard Greens are now ready to serve hot, with steaming hot rice or any bread of your choice!
Notes
Remove the stems and clean the collard greens thoroughly in running water before chopping.
If required, sprinkle some water while cooking for a more tender consistency!
