Super Easy Vegan Chocolate Mousse

- 1. 1 cup Semi-sweet Chocolate Chips
- 2. 2 tbsp Water
- 3. 1/2 block Firm Tofu, drained (about 7 oz / 200 gms)
- 4. 1/4 cup Coconut Milk
- 5. 1 tsp Vanilla Extract
- 6. 1 tbsp Sugar (optional, to taste)
Instructions
Start by melting the chocolate chips with water in a microwave safe bowl. Heat at 30 sec intervals, stirring each time until done.
In a blender or food processor, combine tofu with the molten chocolate, coconut milk, vanilla extract and sugar (optional). Blend until the mixture is smooth and creamy.
Chill for approximately an hour and enjoy garnished with your favorite toppings of berries and nuts! ๐
Notes
1) You may replace coconut milk with any vegan milk of your choice. I prefer using coconut milk for its natural sweetness, flavor and texture.
2) You may use chocolate bars as well in place of chocolate chips.
3) If needed you may add 1 tbsp of coconut oil while blending to add a shiny, smooth texture!
