    Ingredients

    • 1 cup peanuts (groundnuts)
    • 1 tsp oil
    • 3 cloves garlic
    • 1 tsp cumin seeds (jeera)
    • small piece of tamarind
    • few curry leaves
    • 1 tsp Kashmiri red chilli powder
    • 1/2 tsp jaggery
    • 3/4 tsp salt

    Instructions

    1

Dry roast the peanuts over medium heat until they turn crunchy and their skins loosen.

    2

Allow the peanuts to cool completely, then transfer them to a blender.

    3

In the same pan, heat oil and lightly roast the garlic until golden spots appear.

    4

Add cumin seeds, tamarind, and curry leaves; continue roasting until the curry leaves become crisp.

    5

Transfer the roasted spices and garlic to the blender with the peanuts.

    6

Add Kashmiri red chilli powder, jaggery, and salt.

    7

Pulse everything together to form a coarse powder, taking care to avoid over-blending to prevent the peanuts from releasing oil and turning into a paste.

    8

Store in an airtight container and enjoy the chutney powder with your favorite meals.

    Notes

    Tips:
For extra convenience, you can use pre-roasted peanuts., To enhance color and flavor, use Kashmiri red chilli powder., Prepare in small batches to maintain freshness, though it will keep well in an airtight jar for 2-3 weeks., Blend in short pulses to preserve the nutty texture—blending too much releases peanut oil and creates a paste.
