Taro Chips (Mandya Baluk)

Taro Chips, also know as Mandya Baluk in Konkani, is a favorite snack and delicacy among the Konkani folks in India. It is also very popular in Hawaii and becoming well known world over due to its pleasing taste, not to speak of how crispy, crunchy and satisfying a snack Taro Chips is. You can almost call it the king of chips if only the potatoes were not so popular. πŸ˜ƒ I’m making use of coconut oil for frying the chips for an enhanced taste, flavor, fragrance and also because it’s the healthiest! Make sure to store freshly made taro chips in an air tight container in a well hidden secret place. Or be prepared to see these flavorful crunchy beauties disappearing in no time… crickk-crack-gone! 😜🀭

Ingredients

  • 1. 450 gms Taro Root
  • 2. 4 cups Coconut oil (Preferred for enhanced taste) / Any Vegetable oil for frying
  • 3. Salt to taste

Instructions

Peel the skin and wash the Taro Root.

Cut it into small slices in the shape of chips using slicer or knives.

Mix 4 tsp of salt in 6 tbsp of water to make a salt water solution.

Deep fry the chips in oil till they are completely cooked and takes on a bit of crispy texture. (Till the foam subsides).

Sprinkle a little salt water over the frying chips, just before it is done.

Remove the chips onto a paper towel to absorb excess oil and store cooled chips in an air tight container.

Notes

Sprinkle some pepper or red chili powder after frying for a spicy flavor.
