So here’s the recipe to chewy, melt-in-the-mouth chocolate chip cookies that have basic ingredients and are very easy to make. Simple, straightforward and amazingly delicious… Just the way a Chocolate Chip Cookie should be!
Vegan Chocolate Chip Cookies

- 1. 1/2 cup Chocolate Chips
- 2. 1 cup Brown Sugar
- 3. 1/2 cup Coconut Oil
- 4. 1 1/4 cups All-Purpose Flour
- 5. 1 tsp Vanilla Extract
- 6. 1 tsp Baking Soda
- 7. 1/2 tsp Salt
Instructions
Preheat oven to 375 degrees F and line 2 baking sheets with parchment paper.
Beat coconut oil, and brown sugar until smooth and creamy for about 3 mins. Add vanilla extract and mix well. Add all-purpose flour, baking soda and salt and mix by cut and fold method until well combined. Also fold in the chocolate chips.
Drop big spoonfuls of dough 2 inches apart onto the baking sheets.
Bake in the oven for 8-10 mins until bottoms are brown and tops look a bit under cooked. Let cool for about 15 mins.
Your delicious melt-in-the-mouth Vegan Chocolate Chip Cookies are ready to enjoy with a tall glass of milk!
Notes
Tips:
1) The trick to making the best gooey chocolate chip cookie is to not over bake them. At the end of the baking time they will look a bit doughy but will set up as they cool.
2) Do not over mix the ingredients as you may end up with flat cookies.
3) Make a creamy and fluffy oil-sugar combination before proceeding to add the flour.
