Vegan Thai Pineapple Fried Rice is a savory, juicy and delicious fried rice, often served in a pineapple shell! This sumptuous recipe is easy to prepare and is a guest charmer!
Vegan Thai Pineapple Fried Rice

- 1. 4 cups cold Rice (pre-cooked)
- 2. 4 tbsp Oil
- 3. 2 Shallots, finely chopped
- 4. 3 cloves Garlic, finely chopped
- 5. 1 Green Chili, chopped
- 6. 1 cup Peas
- 7. 1 small Carrot, diced
- 8. 1 whole Pineapple
- 9. ¼ cup Raisins
- 10. 1 cup fried Tofu
- 11. ½ cup of water or Veggie Stock
- 12. Salt to taste.
- For Sauce:
- 1. 1 tbsp Soy Sauce
- 2. 2 tsp Curry Powder (Homemade Curry Powder Recipe or use store bought)
- 3. 1/2 tsp Sugar
- For Garnishing:
- 1. 2 stalks Spring Onion, chopped
- 2. ½ cup Cilantro, chopped
Instructions
Slice 1/4th of the pineapple vertically as seen in the above image. Carve out the flesh from the center, leaving just the outer shell. Dice the flesh into little chunks.
Break the cold rice using spoon or hands to separate the grains.
Heat a wok to medium heat and add 2 tbsp of oil. Sauté shallots, chili, and garlic.
Add peas, carrots, salt and some water/stock and stir-fry for 2 minutes.
Mix all the sauce ingredients and add in and cook for another 5 minutes.
Add 2 tbsp of oil, rice, pineapple chunks, fried tofu, raisins and cashew.
Serve the fried rice in the carved-out pineapple and enjoy!
Notes
1. You may bake the fried rice at 350F for 5 minutes in the pineapple shell to release its juices. Wrap the leaf top with aluminum foil to protect it.
