Vegan Thai Yellow Curry Fried Rice

- 1. 1 tbsp Yellow Curry Powder (or Paste)
- 2. 200 g Fried Tofu, diced
- 3. 1 Onion, sliced
- 4. 1/4 cup Carrots, sliced
- 5. 1/4 cup Green Peas
- 6. 3 Green Onions /Spring Onions, finely chopped (bulbs and greens separated)
- 7. 1 tbsp Soy Sauce
- 8. 2 tsp Vinegar
- 9. 2 tsp Sugar
- 10. 4 cups Rice, cooked and cooled
- 11. 1 tsp Red Chili Flakes (optional/ adjust to taste)
- 12. 2 tbsp Vegetable Oil
- 13. Salt to taste
Instructions
To a large pan over medium heat, add vegetable oil. Stir fry the yellow curry powder in the hot oil until fragrant.
Add in onions and green onion bulbs and cook till translucent. Next add in the carrots and green peas and saute for 1-2 mins and then add the tofu, salt and red chili flakes and cook.
Next add soy sauce, vinegar and sugar and mix well. Then add the cooked rice and stir fry, mixing thoroughly. Sprinkle the onion greens on top and remove from heat.
Your super delicious Vegan Thai Yellow Curry Fried Rice is ready to serve hot, garnished with cilantro, a lime wedge and cucumber!
Notes
For best results, cook rice 1 day ahead and refrigerate. 🙂
