Veggie Potstickers with Soy-Ginger Sauce

 

Who thought potstickers can be made vegan? These Veggie Potstickers are an exciting twist to the traditional potstickers that were only availablefor the meat lovers to enjoy. I have used a bunch of different veggies that I could get hold of at home. You could get creative and add any combination of veggies you may please. To top it off, entice your senses with this delicious Soy-Ginger Sauce I am using as a dip alongside these lovely potstickers.

Veggie Potstickers with Soy-Ginger Sauce

Ingredients

  • For the Potsticker:
  • 1. Circular Potsticker Wrappers – 20
  • 2. Finely Chopped Onions – ½ Cup
  • 3. Finely Chopped Cabbage – ½ Cup
  • 4. Finely Chopped Mushroom – ¼ Cup
  • 5. Finely Chopped Carrots – ¼ Cup
  • 6. Finely Diced Water Chestnuts – ¼ Cup
  • 7. Finely Chopped Ginger – 2 tsp
  • 8. Soy Sauce – ¼ tbsp
  • 9. Black Pepper – 2 tsp
  • 10. Vegetable Oil for cooking
  • 11. Salt to taste
  • For the Soy-Ginger Sauce:
  • 1. Dark Soy Sauce – 4 tbsp
  • 2. Vinegar – 2 tbsp
  • 3. Fresh Julienned Ginger – 1 tbsp
  • 4. Water – ½ Cup
  • 5. Red Chili Flakes – 1 Pinch
  • 6. Vegetable Oil – 4 tsp

Instructions

For the Potstickers:

Combine all the vegetables, ginger, soy sauce, salt and pepper in a bowl.

Heat vegetable oil in a skillet over medium-high heat and add the above mixture. Saute for about 10 mins until softened. Place the contents back in the bowl. Let cool.

Spoon 1 tablespoon of the mixture to the center of each potsticker wrapper. Fold over, moisten and seal the edges of the wrapper. Then gently pinch and fold the edges at intervals to make a beautiful restaurant-like pattern (as seen in pictures above).

Heat 4 tsp vegetable oil in a skillet over medium heat. Gently layer the potstickers in the skillet and cook till the bottom turns golden-brown.

Next, flip and add about 3 spoonfuls of water. Cover and let it steam for about 1 min.

Carefully transfer to a serving dish. Repeat with the remaining potstickers.

For the Soy-Ginger Sauce:

Combine all the listed ingredients together.

Your super-delicious veggie potstickers are ready to serve hot alongside this yummy soy-ginger sauce!

Notes

Tips:
1) The mixture or filling for the potstickers can be prepared in advance if you wish to save time.
