Ingredients

  • 1. White Pumpkin - 1 lbs (about 450 gms)
  • 2. Sugar In The Raw - 1 cup (adjust per taste)
  • 3. Clarified Butter (Ghee) - 4 tbsp
  • 4. Raisins - 1/2 cup
  • 5. Cardamom Powder - 1 tsp

Instructions

Wash, de-seed and skin the pumpkin and then grate them to fine little bits.

In a pan, cook the grated pumpkin with closed lid on low heat.

Once cooked, add Sugar In The Raw and mix the contents thoroughly.

Continue cooking till all the water is evaporated and the mixture starts sticking to the pan.

Now, add clarified butter (ghee) and raisins and roast the contents, stirring continuously, till they blend evenly and the color changes to golden brown.

Finally, add the cardamom powder and mix well.

Notes

Tips:
1) Garnish the dessert with roasted and chopped almonds and cashews for an extra crunch!
2) It can be made Vegan by simply replacing the clarified butter with vegan butter or coconut oil. Tastes just as great! πŸ™‚
