Vegan Thai Green Curry Paste

- 1. 5 Green Chilis, seeded
- 2. 2 Shallots, chopped
- 3. 1 tbsp Ginger, peeled and grated
- 4. 2 cloves Garlic, crushed
- 5. 1 bunch Cilantro
- 6. 2 stalks Lemongrass
- 7. 1 tbsp Galangal, peeled and chopped
- 8. Juice of 1 Lime
- 9. 8 kaffir Lime Leaves
- 10. 1 tbsp Coriander Seeds
- 11. 1 tsp Cumin Powder
- 12. 1 tsp Black Peppercorns
- 13. 5 tbsp Veg oil
Instructions
In a motor and pestle, crush the lemongrass. Add the coriander seeds and black peppercorns and again crush well.
Blend this with all the other ingredients in a blender.
Store it in a air tight container and refrigerate.
