Vegan Thai Panang Curry Paste

Ingredients

  • 1. 2 tbsp Lemongrass, thinly sliced
  • 2. 2 tbsp Black Peppercorns, crushed
  • 3. 1 tbsp Coriander seeds
  • 4. ½ tsp Cumin Seeds
  • 5. 1 tbsp Galangal
  • 6. 5 Kaffir Lime Leaves, chopped
  • 7. 2 tbsp Cilantro root
  • 8. 1 tbsp Salt
  • 9. 2 Shallots, sliced
  • 10. 4 Garlic cloves
  • 11. 4 Maze
  • 12. 2 Cardamom pods
  • 13. 4 large green peppers
  • 14. 8 Thai red chilis, soaked in water for 10 mins

Instructions

1. Roast the coriander seeds, cumin seeds and cardamom pods in wok for 2-3 mins and crush it in a mortar and pestle.

2. Add the crushed seeds and rest of the ingredients in a food processor and blend to make a smooth paste.

3. Refrigerate in an air tight container.
