Vegan Thai Panang Curry Paste

- 1. 2 tbsp Lemongrass, thinly sliced
- 2. 2 tbsp Black Peppercorns, crushed
- 3. 1 tbsp Coriander seeds
- 4. ½ tsp Cumin Seeds
- 5. 1 tbsp Galangal
- 6. 5 Kaffir Lime Leaves, chopped
- 7. 2 tbsp Cilantro root
- 8. 1 tbsp Salt
- 9. 2 Shallots, sliced
- 10. 4 Garlic cloves
- 11. 4 Maze
- 12. 2 Cardamom pods
- 13. 4 large green peppers
- 14. 8 Thai red chilis, soaked in water for 10 mins
Instructions
1. Roast the coriander seeds, cumin seeds and cardamom pods in wok for 2-3 mins and crush it in a mortar and pestle.
2. Add the crushed seeds and rest of the ingredients in a food processor and blend to make a smooth paste.
3. Refrigerate in an air tight container.
